What’s better than waking up to the tantalizing aroma of piping hot coffee or elegant seeped tea? Mom works day and night for you from birth until the end, this is her day to deserve some love and care. There’s always the general flowers, chocolate, cute card that says “I heart u” and all, but why not wake her up with something special?
Presenting Kombucha Dove’s Coffee Cake!

Kombucha Dove’s coffee cake
Makes one 8 x 3 ” loaf
Ingretients
Cake:
1/2 cup whole wheat pastry flour
1/2 TBS golden or ground flax seed
1/2 TBS baking powder
1/2 TBS natural sugar
2.5 TBS coconut milk, rice or soy yogurt
1.5 TBS non-dairy milk (Soy, Rice, Coconut, Hemp, Almond, Hazlenut, etc.)
2 TBS cup orange juice
1 TSP pure vanilla extract and/or coffee extract
a healthy shake of cinnamon
Topping:
1/4 cup Whole wheat Pastry flour
2 TBS oats
1/2 TBS chopped walnuts
1 TSP Natural sugar
1/2 TSP baking powder
1 TSP Liquid Sweetener (Maple Syrup, agave nectar, honey, etc.)
shake of cinnamon
1 TSP Non-hydrogenated margarine (Earth’s balance, spectrum spread, smart balance, etc.)
2 TBS non dairy milk
Procedure:
1) preheat the oven to 350 degrees F and lightly grease an 8 by 3 ” baking pan
2) make the topping in a small bowl
3) combined the dry ingredients for the cake in another bowl
4) combined the wet ingredients for the cake in another bowl
5) Pour the wet into the dry for the cake only- mix throughly but don’t don’t over mix
6) pour batter into pan
7) crumble on topping with clean hands
8) bake for 20 minutes in preheated oven
9) Enjoy!
*Note: if not consuming within the next day or two, wrap the coffee cake into tinfoil or plastic wrap and freeze for up to a month
You must use these variations Optional add ins:
Tropical: pineapple, mango, coconut, lime
Snickers: caramel sauce drizzled after baking, chocolate chips and peanuts in topping instead of walnuts
Apple and walnuts
Cinnamon Raisin
Very berry: any berries
Carrot cake: shredded carrot, walnuts, raisins, coconut
Mocha: coffee instead of non-dairy milk
Banana: a spoonful of cubed banana, walnuts, coconut and raisins
Cocoa spice: cocoa powder, cinnamon, cloves and nutmeg
Pumpkin: pumpkin puree instead of the non dairy milk
Christmas: Peppermint extract and crushed candy canes
Hot cocoa: cocoa powder, Marshmellow or ricemellow fluff
Cookie Dough: a little extra sugar, chocolate chips
